  3. Meanwhile toast the bread, slice the tomatoes and the cheese. Butter the toast, lay the tomato and cheese and when the eggs are ready put them on the top. Sprinkle them with salt, pepper, chilli flakes and za'atar.

Crack the eggs and add them to the water, take care not to burst the yolk. Using a slotted spoon, transfer the eggs to a plate. Meanwhile, top each toast with a slice and a half. Place the toast on a plate, butter it, flatten the middle down with the back of a fork. Crack and carefully pour the egg into the flattened middle of the toast, not allowing it to spill over into the plate.
