Steps to make Choco Coffee Muffins:
  1. Firstly in a blending jar, add egg, oil, sugar, cocoa powder & coffee. Blend everything for about 10 secs. Then remove the batter into a large bowl.
  2. Now over a strainer, add maida, baking powder and sieve it. Mix everything very gently by fold & cut method. Donot whisk it hard.
  3. Then gradually add milk to it and combine everything very well to get a consistency as shown in image 3 below.
  4. Now add chocolate essence and again give it a mix. You can also add vanilla essence if you don't have chocolate essence. Then finally add some choco-chips & mix everything well.
  5. Now for pre-heating, take a kadai for pre-heating with it's base covered with salt and a stand over it. I have kept another stand, as I don't have any muffin tray, all together. But if you have a muffin tray, you can avoid the second stand. Now cover it and pre-heat the kadai for 3 mins on high flame and then 4 mins. on medium flame.
  6. Now I took the muffin moulds and placed muffin paper over them. Then add 2 tbsp of cake batter in each mould. If you have a muffin tray or a small tray, then you can add only 1 and half tbsp of batter into it.
  7. Sprinkle some choco-chips over it. Then after 7 mins place the muffin moulds over the tray. Cover it immediately and bake it on a low flame for 25 to 30 mins.
  8. After 30 mins, check it by inserting a toothpick. If it comes out clean, then your cake is done. Now switch off the flame. Let them come to room temperature then you can demould the muffins and serve them.

Cappuccino Muffins These are my favorite muffins to serve with a cup of coffee or a tall glass of cold milk. Not only are they great for breakfast, they make a tasty dessert or midnight snack.
