Add crushed tomatoes to heavy bottomed stock pot. Heat olive oil in large, heavy saucepan over medium-high heat. Add whole peeled tomatoes, water, thyme, bay leaf, balsamic vinegar, and seared pot roast and season with salt and pepper. Stir to combine and reduce heat to low.

  1. Heat the oil in a large heavy saucepan over medium heat and cook the celery, carrot and onion until tender, about 6 minutes maximum.

  3. Add the garlic and cook an additional couple of minutes until fragrant :)

  5. Stir in the tomatos, passata, oregano, parsley, basil, salt and pepper (and red pepper flakes if using) and bring to a boil.
  6. Reduce the heat to a simmer and continue to cook for an hour and a half until the sauce has thickened, adding a little water if sauce is too thick.
  7. Taste, and adjust seasonings if needed.
  8. Serve on a pasta of your choice
  9. Eat!
