Cassata ice-cream is one of the most favored of current trending foods on earth. It’s easy, it is fast, it tastes yummy. It’s enjoyed by millions every day. Cassata ice-cream is something which I have loved my entire life. They’re fine and they look wonderful.

The term cassata stands for little case, and the ice cream typically has a bricklike shape. This ice cream is believed to be inspired by a very popular sweet in Sicily called cassata. Easy home made cassata ice cream with Christmas fruits, pistachio nuts and chocolate can be made with home made dairy free ice cream or your favourite store bought ice cream. To begin with this particular recipe, we have to first prepare a few components. You can cook cassata ice-cream using 7 ingredients and 4 steps. Here is how you can achieve that.

The ingredients needed to make Cassata ice-cream:
  1. Make ready vanilla ice-cream
  2. Prepare mixed dried fruit (with or without peel)
  3. Take amaretto or rum
  4. Make ready chopped glacé cherries
  5. Get unsalted pistachio nuts, bashed in pestle and mortar
  6. Prepare frozen raspberries
  7. Take Zest of half a lemon

It comprises of layers of ice cream. Coat the inside of a two-quart bowl (stainless steel is the easiest) with the chocolate ice cream. Place the bowl in the freezer and allow the chocolate layer to harden. While the chocolate is hardening, soften the vanilla ice cream.

Steps to make Cassata ice-cream:
  1. If raspberries are fresh, pop them in the freezer. Remove ice-cream from freezer. Combine dried fruit with amaretto and then spend 10 minutes chopping glacé cherries and bashing the nuts in to good sized pieces (not too fine), and zesting half a lemon
  2. Now the fruit should have absorbed most of the alcohol, the raspberries will be chilled or frozen and the ice-cream will have softened but not melted. Turn the ice-cream in to a large bowl and mix with a spoon to break it up a little
  3. Add all the ingredients to the ice-cream and fold in, being careful to not over-work.
  4. Spoon mix back in to original tub. You will need a second tub to fit it all in. Freeze immediately. Best left overnight. Will keep in freezer for 2 months.

Place the bowl in the freezer and allow the chocolate layer to harden. While the chocolate is hardening, soften the vanilla ice cream. When the chocolate layer is frozen, take the bowl from the freezer and coat the inside with the vanilla ice cream. Nici Wickes' easy version of cassata ice cream is perfect if you're not a big fan of Amaretto or glacé cherries. This recipe uses roasted almonds, rum and fresh cherries instead.
